CARROT CAKE

2 Cups Flour

2 tsp Baking Powder

2 Cups Sugar                                                                          

1 ½ tsp Baking Soda                                                              

1 tsp Salt                                                                              

2 tsp Cinnamon

1 ½ Cups Oil

4 Eggs

2 Cups Grated Carrots

1 Small Can Crushed Pineapple (Drained)

1 Cup Chopped Nuts

SIFT DRY INGREDIENTS INTO LARGE BOWL.  ADD SUGAR, OIL AND EGGS,  MIX WELL.  ADD CARROTS, PINEAPPLE, AND NUTS.  MIX WELL.  POUR INTO A GREASED & FLOURED BUNT PAN.  BAKE AT 350 DEGREES FOR 40-60 MINUTES.  (REAL EASE WORKS THE BEST).


CREAM CHEESE FROSTING

8 oz Cream Cheese (softened)

1 tsp Vanilla

3 tbl Margarine or Butter (softened)

1 1/2 to 2 Cups powdered Sugar

COMBINE ALL INGREDIENTS TOGETHER.  MIX WELL.  SPEAD OVER CAKE.  YUM!
